Brezza di Ponente - Rosé Wine

Sicilian Lands Typical Geographical Indication 2022 – Rosé Certified from organic production. Wine fruit of the ancient tradition of rosé winemaking, described, in Sicilian dialect, with the phrase: Pista e 'mbutti (press and put in the barrel).   It consists in extracting, immediately after destemming the grapes from the fermentation tank, the newly formed sweet must, before it begins to ferment and take on color.   The fresh must, without skins, is poured into a steel fermentation tank.   Once all the fermentations have been completed, the new wine, in the month of November, is decanted and left to mature in a steel tank. Bottled in June 2023.   It is not subjected to any treatment.   Any residues are due to this natural process.   The aroma and flavor recall those of freshly harvested ripe black grapes.
