LEAN PORK FILLET

Filetto Casareccio is the leanest Calabrian salami among Calabrian salamis.   It is made with the most valuable part of the adult pig's leg, i.e. the rear and internal part.   It has very little fat, no bones or rind; once the casing that surrounds the meat is removed, it is all edible. Massaged with salt, pepper, spices and herbs, pork fillet is a very lean and sweet product with an intense color and a delicate, strong aroma.   Like ham but better!   We already know that you won't be able to do without it. Available in 500 g format.   Obtained from pork loin, the fillet is dry salted and flavoured.   The slow maturing process lasts 70 to 90 days.   With a more delicate flavor than capocollo, it is excellent for creating a tasty aperitif or for creating an appetizer rich in flavor and colour, which will amaze all your guests at the table.
