Mountain trout, lemon and basil marinade-70

La Truitelle ecological preserves contain, depending on their size, two to four small whole rainbow trout, canned by hand. Their artisanal breeding, in the crystalline waters of springs and mountain torrents, gives them a texture very similar to those of wild fish. Pre-steamed, they are topped with an oil-free lemon and basil marinade, which adds a touch of acidity to this low-fat but high-flavor recipe!
