Red Wine - Cantate des Garrigues AOP Languedoc Cabrières

Powerful red while being supple and balanced. Œit: Ruby color, deep Nose: Bouquet of ripe red fruits (cherries, morello cherries) with aromas of thyme and bay leaf. 
A few finely vanilla notes envelop everything.
 Mouth: Good balance with a very pleasant impression of sweetness. 
The tannins are silky and well blended. 
Momentum. 
Aromas of scrubland on the finish. 
Fat, rich, suave wine, finishing with a very pleasant impression of freshness.
 Terroir: Plots surrounded by scrubland, on carbonate schist soils.
 Grape variety: Mainly old vine Grenache, supplemented by Syrah.
 Vinification: Destemmed harvest, traditional vinification, long vatting (28 days).
 Aging: Stainless steel tank Bottling: After 2 years of aging in vats.
 Conservation: Ready to drink but suitable for aging for 4 to 6 years in a good cellar.
 Gastronomy: Serving temperature: 14 to 16°C. 
Recommended dishes: marinated game, grilled red meats with herbs The chosen plots, isolated in this natural environment, are imbued from the month of August with a multitude of aromas exhaled by the nearby vegetation. 
The grape skin captures some of these numerous flavors.   From this observation was born “Cantate des garrigues”, which presents a beautiful balance between power and finesse: silky and grainy tannins underline the very fresh, long finish where a complex bouquet of lavender, menthol, cistus, cade… persists. A rare wine that keeps well, Cantate des garrigues flourishes in culinary combinations where spices enhance the contrasting flavors of Mediterranean dishes. .
