It is at almost 1000 meters above sea level, in the middle of the mountains and lakes which make this magnificent region unique, that ewes and lambs have been raised for more than 4 generations...  You will find Lo Cantou de Bastien in the heart of Lévézou, in the department of Aveyron in the commune of Ségur.

 Respect for nature, animal welfare, the environment, and traditions have been the main thread in the development of the farm since my great-grandfather arrived in the hamlet of La Rouquette. Emile more than a century ago now.  In 2008, my father, Yves, chose to convert the farm to organic farming to limit inputs and their effects on health and the environment.  And, in order to continue with this approach, since 2021, I have engaged the property in the High Environmental Value level 3 approach (the highest level).

 Here, like every year since there have been sheep, as soon as the sunny days arrive in spring, the animals go out into the meadows to graze on the fresh grass.  The lambs are never separated from their mothers in this way and can therefore feed on mother's milk from the first to the last day.  It is precisely this know-how that gives a unique taste to the meat.  The ewes will be brought in at the start of winter to prepare for birth which takes place in March.

 Who says respect for nature says respect for the cycle of animals... Thus, the sheep breed being naturally programmed to give birth in spring, I respect the cycle and do not try to shift it to have lambs all year round.  Now you understand why I will not be able to provide you with packages for a certain period, specifically from the end of October to the end of May: the sheep are resting and all the lambs have left.

 Recently, in addition to producing the hay and cereals needed to feed my wool balls, I have also been growing green lentils and potatoes.  Little by little, I invested so that the harvest, storage, sorting and packaging were carried out on the farm.  This makes it possible to limit polluting emissions as much as possible and to have optimal traceability of the product.

 Finally, the Bastien in question is me, Bastien CLUZEL, both a farmer, producer and seller, I took over the family farm in April 2021 when I was celebrating my 25th birthday.  With a non-agricultural background, I learned everything on the advice of those around me and through personal research.  Convinced that it is possible to break the codes of traditional agriculture (industrial product in a long circuit), I embarked on this project...
