In this pot: tomatoes from the South of France grown in open fields, Italian field-dried tomatoes, coming directly from a producer in Sicily who processes and packages his raw material himself. Italian PDO Parmesan guarantees traceability via a defined breeding and production perimeter as well as local feeding of the herds. The little extra: you won't find any whey. Present in most pestos on the market, its sole purpose is to thicken the preparation at low cost. •Support for the organic French tomato sector grown in open fields. At Omie, we support the production of organic French tomatoes grown in open fields. Depending on the harvest, we obtain our supplies directly from a group of 50 farmers in Provence and a group of around ten farmers in the South-West. This is not trivial when we know that a large part of the tomatoes present in market sauces and jars are imported from Italy or even China, which is the second largest producer in the world. •Why did we put cashews in our recipe? The original pesto recipe includes pine nuts but cashews provide the same very creamy texture. Very often, cashew nuts are grown in Africa and then sent to Asia for shelling. Our cashew nuts are 100% Vietnam, organic, fair trade and traced back to the plot. Grown and shelled on site, they are then sent to France by boat.
