Jamaica Bay

Also called "Jamaican pepper" or "four spices", this berry is neither a pepper nor a chili. Allspice is used in gingerbread. Previously ground, it perfumes cakes, compotes and jams. Used as is in an infusion, it enhances marinades of meats, fish and shellfish. It combines with chocolate and withstands prolonged heat without undergoing alteration.
