The youngest are 7 years old and the oldest have no less than 100 aged in wood for years. The older a balsamic, the sweeter it gets. We recommend using a 7 or 9 year old balsamic vinegar over salads, in combination with an olive oil. A 12 year old balsamic vinegar is already slightly sweeter and thicker in taste, which makes it very tasty with grilled vegetables, arugula with shredded cheese and a piece of meat. From the age of 15, a balsamic vinegar becomes more intense and gets it recognizable sweet depth. At that moment it is ideal to serve with red fruit, a piece of real Parmesan cheese or on a piece lightly fried duck breast. TREBBIANO GRAPE The grape must of the Trebbiano grape is the basis for this vinegar.. It has the typical deep brown color, a persistent aroma and a sweet and sour, balanced taste. It comes in a wooden barrel donated to mature, and transferred every year to a smaller barrel. Because it thickens more and more, it gets thicker and thicker sweeter. The taste becomes more mature and even gets a bit spicy.
