A classic of the Levantine region: makdous, small stuffed eggplants preserved in oil, are traditionally prepared from the end of autumn. Originating from the local varieties “Bou Shawki” and “El Homsi”, our eggplants are grown in the fertile region of Qaa, north of the Bekaa plain, where the dry climate and rich soils fully reveal their flavor. Prepared by hand by a rural women's cooperative, they are first put in brine, then delicately stuffed with nuts, garlic and sweet peppers, before being plunged into oil to be preserved using the ancestral method. Their melting texture, tangy taste and authentic character make them ideal for appetizers, mezze, brunches or vegetarian dishes.
