Roasted Green Wheat - 500g - Freekeh - cereals for winter dishes

If its first traces date back to 2,300 BC, freekeh (green wheat) would have drawn its genesis from the flames. Legend has it that a fire engulfed an entire city in the eastern Mediterranean, destroying the wheat harvest. In order to avoid starvation, the villagers tried to recover their harvests. By rubbing the burnt husks, they discovered that the resulting seed had a smoky, nutty taste. They then baptized it "freekeh", from the Arabic farik meaning "to rub". Today, freekeh is fire-roasted green wheat, available whole or cracked. It is a satiating and nutritious garnish that sublimates lamb, fish, poultry or vegetarian dishes. It can even be added to soups or stews to make them heartier. It can also be eaten cold, in a salad in spring or summer. A product with multiple possibilities for ever more indulgence! Rich in protein and fibre, this atypical cereal is produced by a small cooperative of rural women located in southern Lebanon.
