The anchovy fillets are caught, selected, salted, boned and handcrafted one by one. Anchovies of the ENGRAULIS ENCRASICOLUS species have an elongated, slender body with an oval section and can measure 20 cm in length. It is a common species of the Mediterranean Sea and the Eastern Atlantic between Norway and South Africa. Anchovy stands out from other fish for its high content of calcium, iron, iodine, zinc, proteins, vitamin A and omega-3. It belongs to the blue fish category, which is characterized by its precious nutritional properties.
