The harvest begins in October at the beginning of veraison and the olives collected in the first week are ground daily and separated for this special selection. . Full-bodied oil, with a mild bitterness and spiciness indicative of the higher percentage of antioxidants (polyphenols), characteristic of the Picual variety of olives at the veraison stage. With an intense green fruity aroma with notes of freshly cut grass and tomato plants. Recommended for raw consumption.Presented in a clear bottle to reveal its intense green color.
