The copate, formerly called "Nebulae", place their origins around 1400 with the arrival of white sugar in Siena; once again this dessert is created in a monastery. The traditional recipe is the result of some changes made up to the eighteenth century. The Manganelli grocery store presents its traditional version based on almonds, egg white, honey and of course sugar. With an unmistakable taste, this dessert enclosed between two hosts is characterized by its lightness and softness: a classic of the Sienese tables.
