Strips of long, thin pasta rolled into a spiral, obtained with a special dedicated machine. Produced with Tuscan durum wheat semolina, handcrafted and dried at low temperature. ANDa very porous format like handmade pasta, capable of retaining seasonings to enhance the taste of first courses. Also good for pre-cooking, they don't overcook or stick even if left in the pan. Ideal with pesto or with anchovies and breadcrumbs.
