Forest honey is harvested mainly at the end of summer, between July and September, from the nectar of flowers and the honeydew of trees such as oaks, lime trees and conifers. Its color varies from amber to dark brown, with an often liquid texture and slow crystallization. Rich in minerals and antioxidants, it offers a full-bodied taste with woody and malty notes. In the Dordogne, it is particularly produced in the forests of Périgord Vert and Périgord Noir, where the plant diversity gives it a complex flavor. Known for its character and thick appearance, forest honey is an atypical honey with complex, woody aromas and notes of caramel. Its thick and round appearance in the mouth allows it to be savored for a long time. Forest honey comes from honeydew. What is Honeydew? Honeydew is not honey from a nectar such as Flower Honey. To produce honeydew, bees are not the only ones involved, because this production requires the intervention of insects upstream. Thanks to aphids, whiteflies, and even scale insects, which consume the tender part of oak leaves, particularly to feed on the nutrients contained in the sap, they then release a sugary substance that they cannot digest: honeydew. Forest honey is a honey produced from honeydew found in particular on the oak leaves of our Périgord forests. This production extends from June to July when the weather is hot and dry during the day.
