Since 2012, we have been a small, artisanal business based in St-Girons in Ariège. Now made up of sixteen people brought together in a worker cooperative (SCOP), our team ensures production and delivery throughout the year. Since spring 2022, we have opened - at our production site - a shop-tea room offering breads, pastries, cakes, a grocery corner and light meals, all organic of course.
Of the 19 sweet biscuits in our range, some are gluten-free and two are vegan. In our biscuits, with or without butter, various flours are combined with dried, candied or dried fruit, chocolate, poppy and sunflower seeds and spices to create a variety of old-fashioned shortbread, cookies and macarons. We also offer a small selection of savory snacks for aperitifs.
The biscuits are prepared using only natural organic products, without coloring or preservatives, and are certified organic. We also favour short and local supply chains for our raw materials. If this is not possible
(sugar and chocolate), we require fair trade product certification.
All our products are certified organic. Most of our biscuits
are listed under the "Valeurs Parc" label because they meet specifications that guarantee the
regional origin of raw materials, local know-how and processing sites in the Occitanie region and more specifically in the Ariège Pyrenees Natural Park.The Ateliers de la Liberté has a purpose: to be an actor in the transition.
