The lomo is a muscle along the spine of the Iberian pig located as a continuation of the lomito. Each 170kg Iberian pig yields on average 2 lomos of around 1.2kg matured. It is eaten fresh but, as it is much less marbled than lomito, it is in embutidos (charcuterie) that it best expresses its flavor and subtlety.
