Exotic jam - TAMARIN - 250g

Tamarind This bean-shaped fruit, whose tangy pulp makes a syrup appreciated by children, can be tamed by sugar without losing its character. On a woody nose, the fragrant acidity of this tamarind from the Anosy region, in the south-east of Madagascar, develops in the mouth with an almost fleshy side, leaving light astringency on the tongue. Add to that an almost sensual creaminess and you have one of Bernadette de Lavernette's most addictive jams. Widely used in Indian cuisine in particular, tamarind advantageously enhances sauces. This jam will give a nice color to your lamb tagine with prunes. It can also be eaten with a spoon, as it is, but beware of frustration if you only have one jar!
