MANDARIN RUM HONEY: It is in this order that you will appreciate its components.  On the nose, it is in fact the Vatovavy-Fitovinany mandarin that blossoms first, supported by scents reminiscent of fruits in brandy.  The honey delicately coats everything, but not without leaving its discreet initials.  In the mouth, the gelatinous texture and the fruit zest cut with scissors are surprising.  A texture whose strategy becomes clear: carry the tangerine, dress it like a diva, with honey and rum, then withdraw, leaving it there, alone, magnified, offered without restraint and consenting to the exhilarated palate.  His performance ends with a delicate bitterness, with a beautiful length.  This sweetness will go nicely with natural yogurt for breakfast.   Paired with Bernadette de Lavernette chili jam, she will wear a more Asian dress to flirt with steamed shrimp.
