Cinnamon

Cinnamon, the spice with warm notes that sometimes awaken reminiscences of childhood…. an apple pie sprinkled with cinnamon, Christmas cookies, a warm and sweet smell escaping from the kitchen... I use it more easily in sweet preparations, but having no sweetening power, it reveals the notes sweet savory dishes. Coming from the Ceylon cinnamon tree (Cinnamomum verum), its flavor is sweet and subtle, with notes of citrus, vanilla and clove.
