Inspired by the tropical ravine in the hothouse in Botanic Gardens in Belfast this is simplicity itself. Just goes to show that you don’t need a lot of ingredients when it comes to putting a sauce together. Due to the high fructose content in the pears, this is perfect for marinades where the sauce carmelizes with the application of heat giving your dish a whole other flavour profile. Great with pizza crusts, falafels or nachos and that’s just for starters (or mains lol). The Scorpions really do have a sting in the tail which is why you chili-heads keep coming back for more.
