Outstanding transparency, a natural wine-making approach and a hint of innovation. This is what a few new generation winegrowers from the cognac appellation area offer, including Frédéric Bourgoin. Nice encounter in the eastern Charente, 9km west of Angoulême.
FAMILY AT THE HEART
Frédéric Bourgoin, founder of the eponymous cognac house, knows the martingale well. Four generations of winegrowers have followed one another before him on the family farm located in the heart of the small village of Tarsac in Charente. Here the terroir is not an empty word and the young winegrower knows that cognac is made primarily in the vineyard. Since 2015, the youngest of the cognac houses has been offering atypical eaux-de-vie both in substance and in form. The key is a guiding vision: to reconcile the French with cognac. Cognac, an obsolete spirit relegated to the rank of dusty digestives in its native country. The winegrower's secret? A natural viti-vinicultural approach, excessive transparency, and a hint of innovation within the framework of the AOC.
LEGITIMACY: BLOOD, TIME AND SPACE.
The family estate has been known as Bourgoin since 1930 and today extends only over Cretaceous basements (dating from -145 to -66 million years ago). “We still grow, vinify, distill and age our eaux-de-vie mainly for our historic trading partners in the place of Cognac. The recent bottling in my own name aims to spread the economic risk in terms of outlets for my 24ha vineyard, but Bourgoin Cognac is above all a winegrower's voice and a laboratory of ideas. I dedicate myself almost exclusively (98%) to fine dining and French cocktail bars. I love working with chefs and bartenders. An AOC is a collective work, I want to add my stone to the building. I like the idea that you can have a different approach even on a very tight category. There is no hegemonic will. I take pleasure in making cognacs that I like. If I can share this emotion with amateurs, then my happiness is overwhelming, ”says the man who likes to define himself as an inspired winemaker and alchemist on the loose.
