This coffee is grown in the Marcala region, between 1200 and 1700 meters above sea level and then harvested between November and February. From organic farming, it is the result of the work of several partner producers of COSMA (Café Organico Marcala). This private company approaches the culture of coffee with an approach based on sustainability. The cooperative is oriented towards supporting producers who wish to set up advanced organic farming. Together, the cooperative and the farms are working on a change of culture to move from conventional agriculture to organic agriculture around very strong environmental values. The 700 or so producers who make up this company regularly receive courses in coffee tasting and organic farming. The cooperative also subsidizes the education of children in the community in order to foster future generations.
