Château Caillivet AOC Graves Red 2011

Attention lovers of old vintages!   This red wine is elegant, powerful and complex.  Its aromas of black fruits and spices gradually give way to scents of blond tobacco and liquorice.  Coated by careful woodiness and silky tannins, its structure is dense and persistent on the palate.  A wine that will certainly be a sensation on the table (and in your glasses)!  Assembly: 50% Merlot - 50% Cabernet Sauvignon, Terroir of clayey gravel on limestone subsoil.  Winemaking: Vatting in stainless steel vats and thermoregulated wooden vats, traditional extraction by pumping over and unloading.  Vatting for 20 to 25 days.  Malolactic fermentation in thermoregulated stainless steel vats.  Light filtration.  Breeding: For 15 months in French oak barrels, 50% in new barrels and the remaining 50% in wine barrels.  Tasting advice: In its mature phase, it will be particularly appreciated with simmered meats, game and with all sauces and mushroom-based dishes.  It will also be a very good companion to a grilled piece of beef and characterful cheeses.
