Château Caillivet AOC Graves Red 2019

Nice balanced and round vintage.  Its nose is well perfumed with touches of violet and candied red fruits, the palate is sappy with ripe tannins.  Despite its young age, this wine has a very nice roundness in the mouth.  To uncork without delay or to forget in your cellar for a few years, this wine will amaze you on every occasion.  93/100 in the Dussert-Gerber Wine Guide, Gold medal at the 2022 independent winegrowers competition.  Assembly : 50% Merlot - 50% Cabernet Sauvignon, Terroir of clayey gravel on limestone subsoil.  Winemaking: Vatting in stainless steel vats and thermoregulated wooden vats, gentle and rational extraction by light pumping over and punching down.  Vatting for 20 to 25 days.  Malolactic fermentation in thermoregulated stainless steel vats.  Breeding: 12 months in French oak barrels 50% new barrels, 50% single wine barrels.  Tasting advice: When young (2 to 6 years), it will be particularly appreciated with roasted or braised red, pink meats: duck, beef, veal or lamb.  It will also go wonderfully with a well-ripened cooked cheese.
