Château Fonsalade - AOP Saint-Chinian Red

Grape varieties 80% Grenache, 20% Syrah The Puech de l'Homme and Pensière vines located in the coolest area of ​​our schist and clay-limestone hillsides allow us to achieve the optimal balance of maturity to make a wine with a rich and creamy texture. This current of fresh air coming down from the Black Mountain also gives this wine its freshness and minerality.   The manual harvest of our old Grenache and Syrah vines, full of sunshine, allows us to express in this historic vintage, all its complexity and the finesse of its juices. The grapes are poured by gravity into raw concrete vats and temperatures are controlled from 12 to 23 degrees throughout the vinification process to preserve the aromas of red and black fruits. Alcoholic fermentations take place in a static phase so that the extraction is as gentle as possible.   During maceration, the Syrah and Grenache marc are delicately heated to obtain silky and velvety tannins. 90% of this blend is aged on fine lees in concrete vats buried in the historic cellar and 10% in old demi-muids for 12 months.    The characteristics of these maturations give this subtle wine a pleasant and creamy patina. The combination of shale soils bringing freshness and minerality with clay-limestone soils giving deliciousness and structure makes this eponymous vintage a rich and complex wine with a taste framework of red and black fruits.
