The Lapierre family lived and cultivated the vines in the commune of Coudoux from the end of the 18th century. It was in 1935 that Jean Lapierre, then an officer in the French Navy, decided to devote himself solely to the terroir, mainly planted with olive trees.
In 1952, Max Lapierre, succeeding his father, undertook the transformation of the exploitation into a wine property and transmitted all his know-how and the love of the profession to his son, Yves Lapierre.
The latter created the Domaine Saint Hilaire in 1973 and became harvesting owner, driven by the desire to produce a great wine, one of those whose richness is based on the originality of the terroir. This determined love guided all his choices, from growing vines to aging wine.
It was in 2011 that Yves Lapierre, accompanied by his two sons, Nicolas and Bruno, undertook the construction of a wine complex in the heart of the vineyard, named Château Saint Hilaire. The last phase was completed in 2016.
The vineyard is located on the stony slopes of the Coudoux hill range. Halfway between the Montagne Sainte Victoire and the Massif des Alpilles, extends the vineyard of Château Saint Hilaire.
Facing south, the 60-hectare estate, in Organic Farming, benefits from exceptional sunshine under the Mediterranean influence, where the mistral rocks its beneficial breath on the bunches of grapes until they ripen.
Black and white Grenache, Syrah, Cabernet Sauvignon, Sémillon, Rolle Clairette, Sauvignon, Muscat Petits Grains and Viognier are the main grape varieties grown on our plots.

It was for the 2012 harvest that the new cellar was inaugurated in the heart of the Saint Hilaire vineyard.

Equipped with high-tech equipment, this wing of the Château dedicated to production replaces the old village cellar, which until then was housed in a former sheepfold.
The vinification of our whites and rosés, orchestrated by our wine merchant oenologist, benefits in these new buildings, from an inert and thermoregulated environment.
Our red wines are aged in a remarkable barrel cellar, under the care of the cellar master. The attachment to traditions remains intact.
