 The olives are harvested, starting in September, separately from those intended for oil production, then debittered for 2 months during what is called a "confectionery" process.    Harvested in Terracina, in the Lazio region (Rome), these olives are 100% natural.   They have not undergone any chemical treatment and contain no additives.
