MOROCCAN SQUARE PEAS FOAM

This mousse is concocted with square peas: a forgotten legume, all enhanced with Moroccan flavors such as agave syrup or a mixture of tagine spices. All our preserves are crafted in Auvergne. This recipe favors short circuits thanks to our partnership with our local Auvergne producers.
