As soon as they are harvested, the courgettes are brought to the farm and are immediately processed, following the typical recipes of our grandmothers. Cut into slices, they are kept for a few hours in water and vinegar and are then grilled on smooth stone. Finally, the grilled courgettes are enriched with typical spices of our territory and with extra virgin olive oil.
