MELEGUETA PEPPER

Grains of Paradise, also known as Melegueta pepper, are the seeds of a ginger plant that grows almost exclusively in the humid tropical climate of the west coast of Africa. The grains of paradise are an almost odorless spice, so we are all the more surprised by the warm and intense, subtle and elegant tartness, with a slight hint of nuts. This pepper is suitable for all stews, mixtures of African spices with lamb, fish and chutneys. Even for pastries, as an ingredient in gingerbread spices or in jams, grains of paradise add a very special touch. It is best to use coarsely ground or freshly ground grains.
