The Port of La Rochelle occupies a central place
in the long history of cognac since it is on
its quays and in its hinterland than the first
white wines from Aunis & Saintonge were exported
towards the North in the 16th century.  
It is in this city which already advocated religious tolerance that
the elements came together to give birth to cognac.  
La Rochelle was a major place for the salt trade which attracted all
Europe and its most intrepid merchants.
•It had a hinterland producing wines with commercial potential
(Aunis & Saintonge wines).
•With access to safe marketing channels (channels for
transport the wines to the port and a naturally sheltered port).
•Long-distance merchants who mixed local traditions and innovations
foreigners to invent the ancestor of cognac (the Dutch first
then English).
•The technological knowledge of the Arabs of distillation which arrived in the southwest
thanks to the Jews.  
Bonaventure Godet, when he came to La Rochelle for the salt trade in
mid-16th century, very quickly specialized in the wine trade and then in burnt wine
as evidenced by recognition
official that the King of France addresses to him
in 1588 to congratulate him on his excellent
work as a distiller.
