Krassel White Rum | Oaxaca – Mexico – 0.7 liter bottle 55% | Pure juice white rum (type “agricultural”) Cane variety: java| Slow fermentation in pine wood vats | Double distillation in a traditional still Origin: Rio Blanco – Oaxaca – Mexico Producer: Krassel family Tasting note: On the nose, this rum reveals itself very quickly. The attack of the cane is very sweet and slightly spicy. After a few seconds, a scent of warm butter croissant balances the vegetal notes. As it opens up further, it is accompanied by a slight acidity that evokes the skin of a freshly cut green banana. On the palate, the rum is surprisingly smooth for its 55% and has a superb texture. We find the pastry qualities of the nose and slightly aniseed vegetal notes reminiscent of wild fennel and toasted avocado leaf. Finish: salt-roasted nuts and almonds replace the croissant and a slight astringency accompanies the finish with a lovely length in the mouth. This white rum, hand-distilled by the Krassel family and of absolutely exceptional taste quality, was transported by sail aboard the Gallant in spring 2023.
