SMALL LAVENDER CALISSON INDIVIDUALLY WRAPPED

Delicate little lavender calissons, individually wrapped. This creation by Roy René revisits the traditional recipe by incorporating the floral notes of IGP Provence lavender, an emblematic flower that delights foraging bees in the summer sun. Each bite reveals the subtle marriage of finely ground almonds and candied Cavaillon melon, delicately flavored with lavender, all placed on a thin sheet of unleavened bread and crowned with royal icing.
