These anchovies belong to the Engraulis Encrasicolus species, the tastiest and most sought-after on the market. After being caught on the Cantabrian coast, cleaned and salted, respecting a curing period of between 12 and 15 months, we make them by hand, turning them into one one of the most desired products. This product is characterized by having managed to reduce salinity by 40% after being subjected to an additional wash. The same quality, flavor and texture of its loins is maintained. It contains 12-14 loins.
