This authentic pâté de tête will delight gourmets. It is made by me with artisanal know-how in order to offer you an authentic and excellent parsley pâté.    Tasting: serve very cold with salad, fleur de sel and pickles.    Chef's advice: add a little parsley, herb seasoning, gherkins and good country bread then salt with Guérande salt... or even in pieces in salad
