Are used for these preparations of tomatoes of long varieties, specific to this production and presenting characteristics of behavior and appropriate firmness. • Color of the covering liquid = pure red. • Fruit color = bright red, bright orange veins. • Flavor: normal, frank and characteristic of tomatoes. • Caliber: regular. • Hold: good. 70% to 80% of the tomatoes have retained their integrity or show no lesions modifying the shape or volume of the fruit.
