Soil Gravelly of alluvial origin.    Grape variety Pergola Variety 100% Pinot Grigio Collection Mechanical harvest at physiological maturation Winemaking Classic white winemaking with hyperoxidation of the must.   Fermentation at a controlled temperature at 18 degrees.   After decanting, it ages in steel for approximately four months.    Sensory Analysis The color is straw yellow with greenish reflections.   Fruity, very floral scent with notes of violet and acacia.   The flavor is broad, pleasant with a fresh and savory streak.   Very persistent.    Pairings The great success of this wine is due to its "simple" importance and great flexibility at the table.   Perfect on tomato dishes and fish soups, excellent as an aperitif, with young cheeses, with cured meats, with cooked ham and mortadella.
