It all started during my travels in rural Africa, where I had the chance to accompany hundreds of women, encountering fascinating customs and know-how. It was there that I observed an intriguing practice: Moroccan women prepared their coffee by roasting date pits in a pan. Curious and captivated, I learned that this ancestral recipe gave them the energy they needed to work more efficiently throughout the day. It was a ritual that combined tradition and well-being, and I was immediately struck by the richness of this drink.
But what really struck me was that until that moment, as an avid date eater, I had never considered throwing away date pits. On the contrary, I was anxious about not giving them a second life. That's when the idea of transforming these pits into a healthy and unique drink crossed my mind. A solution that is both ecological and delicious and that would enrich my daily habits.
With this inspiration in mind, I began researching and was amazed to discover that this date stone drink had been consumed in Europe since the 19th century, right up until the start of World War I.
