Cockles Los Peperetes tasty and hand packed. Before starting the handling process, upon receipt of the cockle at the factory, it is deposited in containers of sea water so that it naturally de-drains. Once steamed, the food is shucked and washed very carefully in warm semi-salted water, then manually selecting the best-sized pieces and placing them one by one in the can.
