The most used condiment in Mediterranean cuisine. Parsley, along with the garlic that it so often accompanies, is the other undisputed queen of our kitchen. It is closely related to grilled or baked fish and mushrooms, but it is also part of very elaborate dishes, where it enters as part of the picada, raw or fried. It can be added even raw when presenting the dish, with oil and garlic; in this case, the unpleasant smell of garlic kills a little. We all remember a certain Basque chef who was very popular a few years ago in the television media, who put a twig literally everywhere. It is used to season sauces, savory dishes or soups.
