No 105 Mallorcan Verna Lemon

When friends invited us to their wedding near Sóller on Mallorca, we got to know the Serra de Tramuntana for the first time and were thrilled. We especially remembered the incredibly aromatic lemons that made such an excellent jam. And so it was clear that we had to have this fruit in order to make an equally aromatic spirit from it. Our supplier obtains the widespread Verna lemon from small producers who produce organically and do not use any treatment during ripening and after harvesting. The essential flavor carrier of our spirit is the key aroma of the lemon, the citral (an isomeric mixture of the aldehydes geranial and neral). In addition, the main quantitative components are limonene, as well as β-pinene and γ-terpinene. Genetically, the various types of lemon are hybrids of the bitter orange and the citron (Cedro). With its clear, pure and strong lemon note, this spirit is the ideal accompaniment wherever lemons or their juice are added: to fish dishes, summer salads, in dressings, Mediterranean dishes and sour cocktails. In the latter, however, it only serves to intensify the lemon aroma, because the acidity of the lemons is not volatile and our lemon spirit is therefore not acidic either!
