Marcel Michel - Gentian Eau de Vie

Of exceptional finesse, this eau de vie Gentian is distilled from the roots of yellow gentian plucked during the fall uniquely. 15 kilos of roots are needed to produce 1L of alcohol, and knowing that its roots will not grow that from 800 meters altitude in our mountains and can only be harvested after 7 at 10 years of maturity of the plant, this explains the rarity of this brandy strictly regulated by French law. The mixture of water and roots will allow a fermentation of 10 weeks which will provide the alcohol necessary for the distillation of brandy gentian. The alcohol will fully restore the taste typically bitter and sweet from gentian.
