Nature in a bottle
My aperitifs are fermented drinks of fruit juice or flower infusions.
The production site is located in Mézerolles, a small village in the Authie valley. The numerous pastures bordered by hedges are far from any pollution. This is where I pick most of my raw materials: blackberry, hawthorn, wild apple, wild rose, elderflower…
The fruits are pressed and the flowers infused, yeast and sugar are added. They will consume it to transform it into alcohol: This is fermentation.
The time of maturation arrives. The aperitif rests, brightens naturally and the aromas develop.
All these steps are done with respect for the aperitif, we cajole it, we take the time to let it grow.
