CANOPY

Made from an ultra-ripe Petit Manseng harvest, this dry balancing jurançon displays great concentration. The nose sets the tone with complex notes of honey, thawed quince, gingerbread and dried fruits, coated with finely roasted scents. Sweet and savory cuisine, asparagus puff pastry, monkfish in a chanterelle mushroom sauce, filet mignon with autumn fruits, very pleasant with foie gras and sweetbread accompanied by morels.
