Cuvée Madrigal 2019 vintage APPELLATION: AOP Côtes du Rhône Village Visan rouge - Organic wine certified by ECOCERT DESCRIPTION: Clear, bright red color. On the nose, an aromatic framework with notes of kirsch, rosemary and crushed raspberries. In the mouth, the attack is fresh and supple, the structure is fine with tight tannins. The finish is long. GRAPES: 80% Grenache, 20% Syrah KEEPING: 5 - 8 years VINIFICATION: Traditional vinification, in concrete and stainless steel vats, with short vatting of around 15-20 days and flexible work, with progressive and controlled extraction, so as to obtain a qualitative material. The temperature does not exceed 27°C. Aging is done only in concrete vats because we want to preserve the crisp and fresh fruitiness of this wine, as well as its soft structure, which does not require passage in wood. SERVING TEMPERATURE: 16-18°C PAIRING: Dishes based on red meat or offal. Examples: prime rib, veal liver, black pudding with apples, leg of lamb or grilled lamb ribs, mutton sausages and pan-fried sweet potatoes.
