Organic White Wine Rolled Pebbles 2023 AOP Coteaux du Languedoc

Selected by Le Guide Hachette des Vins - 2022 Deposited more than 3,000 years ago by the Rhône, these rolled pebbles have become the emblem of this exceptional terroir. Expressive nose of lilac, bergamot tea and jasmine. The mouth is ample with a saline finish. Harvested by hand at sunrise, at the time of day when temperatures are coolest, the grapes are carefully placed in crates and taken to the winery to be gently pressed using a pneumatic press. The extraction of juices is delicate and is carried out away from air because oxygen is the enemy of aromas which it would oxidize. They are then stabilized at 6° in order to separate the heavy plant compounds which work against finesse. GRAPE VARIETIES Majority of Rolle, aromatic and fresh. Minority of Roussanne for its floral flavors and of Grenache blanc for its roundness. HASAge of the vine: 25 years. Yield: 35 hl/Ha. DRESS Pale yellow and shiny dress with pretty green highlights.
