AOP Saint-Chinian - 2018 Vintage - SOIL & CLIMATE Clay-limestone. Mediterranean with ideal sunshine for ripening. -GRAPE VARIETIES 60% Syrah, 40% Grenache - VINEYARD Converting to organic farming since 2012. Respect for the vines is one of our priorities. Production is maintained at 30hl/ha. -VINIFICATION Harvested at the edge of overripeness, these grape varieties produce a concentrated, highly distinctive aroma. Vinification is carried out separately in vats with temperature control. - EAGEING AND PACKAGING Once the blend is complete, the wine will age in vats on fine lees for 24 months. Its stability and balance allow us to keep it for 5 years.
