AOP Saint-Chinian - Vintage 2024 - SOIL & CLIMATE Clay-limestone. Mediterranean with ideal sunshine for ripening. -GRAPE VARIETIES 60% Grenache, 40% Syrah. -THE VINEYARD Organically farmed since 2015. Respect for the vines is one of our priorities. Production is maintained at 40 hl/ha. -VINIFICATION The harvest is mechanical. The grape varieties are vinified separately. Upon arrival at the winery, the harvest is destemmed and undergoes a traditional vinification process lasting twenty days. During this process, punching down and pumping over promotes the extraction of the aromas that characterize our terroir. -AGING AND PACKAGING Aging continues in vats for a few months before final blending and bottling.
