Autumn Harvest

This wine is a 100% Chardonnay. The grapes are picked overripe, i.e. they have suffered dehydration and the appearance of noble rot. High amounts of sugars are obtained in the juice. The vinification is the same as for a classic white wine. The only difference is that the fermentation is stopped before the end of the total consumption of sugars. The color is yellow with golden reflections. On the nose, there are aromas of apples, nuts and honey. In the mouth, we find these aromas of honey as well as a beautiful acidity which makes it possible to counterbalance the sweetness of the wine and thus to have a good balance.
